What you need:
1.5 oz. gin
3/4 oz. simple syrup **
Juice of 1 lemon
Champagne or delicious sparkling (3 to 4 oz.)
Two of your most delightful champagne or cocktail glasses.
The rocket science part
Pour the gin, simple syrup and lemon juice into a cocktail shaker filled with ice. Shake cherie, shake.
Place a cocktail strainer over each glass and slowly pour in half of the mixture per glass.
Top off each glass with champagne.

** Simple Syrup instructions
1 cup water / 1 cup sugar
In a small saucepan, bring sugar and water to a boil; simmer until the sugar is dissolved, 3 minutes. Remove from the heat and let cool completely. Keeps for about a month in the fridge.
